You will need:
For the yeast:
- 12 g fresh yeast
- 1 tsp honey
- 100 ml milk
- 50 g flour
Dough:
- Prepared yeast mixture
- 300 g flour
- 1 egg and 1 yolk
- 80 g sugar
- 80 g butter
- A pinch of salt
- Zest of one lemon
Glaze:
- 70 ml water
- 50 g sugar
- For the cream:
- 250 ml cream
Powdered sugar to taste
To start, mix fresh yeast, slightly warm milk, a teaspoon of honey, and flour. Place it in a turned-off oven for 15/20 minutes. The yeast should double in size.
Then, take the risen yeast mixture, add sugar, eggs, lemon zest, and salt. Start kneading your dough.
Gradually add flour.
Once the dough is kneaded, add room temperature butter. Knead the dough well, and if necessary, add a little flour (at the very end) until the dough comes away from the sides.
Now, place your dough on the work surface and form a ball. Put the dough in a turned-off oven for 2 hours or until the dough doubles in size.
Now, place the dough on the work surface and shape our buns. Place the buns on a baking sheet, maintaining distance. Let the buns rise for another hour in the turned-off oven.
Once the buns have doubled in size, preheat the oven to 180°C and bake for 15 minutes.
While the buns are baking, heat a pot with water and sugar to a boil to dissolve the sugar. Remove from heat, and once the buns are ready, brush them with this syrup while they are still hot.
Now, let the buns cool. Meanwhile, whip the cream with sugar. Once the buns have cooled, cut them and fill them with cream. ??
