Tirotto or Onion Sciacchata

Tirotto, or you could call it sciacchata, or you can refer to it as focaccia… Originally from Mantua, it is prepared with a large amount of onions. ?

You will need:

  • 500g Flour
  • 300g Water
  • 8g Fresh yeast
  • 500g Onions
  • 100g Rendered lard
  • 10g Salt

To start, thinly slice the onions.

Now, pour water into a bowl, add yeast, and then flour.

After a couple of minutes, add salt and rendered lard.

Then add the onions and knead. The dough will be quite sticky.

Grease a bowl with olive oil, place the dough, cover, and leave it for about 1 hour at room temperature.

Then grease a baking sheet and spread the dough, shaping it neatly with your hands (about 1.5 cm thick).

Leave the dough for another 20-30 minutes.

Preheat the oven to 200 degrees Celsius.

Bake the focaccia for 30-40 minutes.
