You will need:
Batter:
- 200g Flour
- 100g Sugar
- 80g Butter
- 1 Egg (medium-sized)
- 1 Egg yolk
- Lemon zest
- A pinch of Salt
Filling:
- 300g Plums
- 60g Sugar
- 1 tsp Cinnamon
- 40g Water
- 1 tsp Cornstarch
- 3 tbsp Plum jam (I used apricot)
- 20g Almond flour
To start, prepare the batter.
In a blender, mix cold butter with flour, lemon zest, salt, and sugar until it reaches a sandy consistency.
Then, add the eggs and continue to mix.
Wrap the dough in plastic wrap and refrigerate it for 30 minutes.
Now, wash and pit the plums.
Cut the plums into pieces and place them in a skillet with sugar.
Cook over medium heat for about 5-8 minutes.
Dissolve the cornstarch in water and add it to the plums.
Once the plum sauce thickens, remove it from the heat and let it cool.
Mix in the jam into the cooled plums.
Now, divide the dough into 2 parts.
Roll out the first part (I recommend rolling it out on parchment paper for easier transfer to a baking sheet).
Place it in a 20x20cm baking dish.
Poke holes in the base with a fork.
Sprinkle almond flour over the base and add the filling.
Now, roll out the second part of the dough. Cover the surface.
Bake for 35-45 minutes at 180 degrees Celsius (356 degrees Fahrenheit).
