You will need:
Dry ingredients
- 255g Flour
- 1 tsp Baking soda
- 6g Cocoa powder
- 190g Sugar Pinch of salt
- 180g Kefir (if you don’t have kefir, mix 90g Milk + 90g Yogurt + 2 tsp Lemon juice)
Liquid ingredients
- 2 Eggs
- 1 tsp Vinegar
- 150g Vegetable oil
- Food coloring
Cream
- 200g Heavy cream
- 150g Cream cheese (such as Philadelphia or a similar one)
- 200g Mascarpone cheese
- 80g Powdered sugar
If you don’t have kefir, mix the milk ingredients with lemon juice 20 minutes before making the cake and set aside.
Separately, mix the dry ingredients.
And separately, mix the liquid ingredients and add food coloring. Mix the liquid ingredients with kefir or the prepared mixture of milk ingredients.
Now add the dry ingredients and mix well with a whisk.
Place the batter in a 20cm baking pan.
Bake at 180 degrees Celsius for about 45-50 minutes.
Check for doneness before removing from the oven.
Let the cake cool and prepare the cream. Whisk all the ingredients together until creamy and thick. Now you can assemble your cake.
