Pull-apart bread

You will need:

Dough:

  • 450g Flour (high-quality or Italian 00)
  • 50g Sugar
  • 4g Dry yeast
  • 60g Butter
  • 140g Milk
  • 3 Eggs (medium-sized, at room temperature)
  • Orange zest or Vanilla extract
  • 6g Salt
  • Olive oil for the working surface

Filling:

  • 200g Sugar
  • 2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 60g Butter


To start, gather the flour, yeast, zest, and sugar in a mixing bowl.

Use the dough hook attachment. Mix the ingredients.

In a separate bowl, pour in slightly warm milk, melted butter, and add salt.

Stir and gradually add to the dry ingredients.

Knead the dough until the butter and milk are well absorbed.

Then start adding the eggs. Do not add all at once. Add one at a time and let it mix well before adding the next.

Continue kneading the dough for about 10 more minutes at medium-high speed.

Now, grease the work surface with olive oil and place the dough on it.

Start folding the dough and shaping it into a ball.

Then let the dough rise for 3 hours at room temperature.

The dough should double in size.

Then place the dough on the work surface and begin rolling it into a rectangle measuring 50×45 cm.

Melt the butter and brush the entire square.

Mix the cinnamon, nutmeg, and sugar.

Sprinkle the entire surface of the rectangle.

Now, drizzle the remaining butter.

Next, cut the dough into 20 squares, each measuring 10×11 cm.

Now prepare a 11×23 cm baking pan (not larger). Grease it with butter and line it with parchment paper.

Now, stack all the squares, placing one on top of the other like a book, and place them in the baking pan.

Let the dough rise for another 30-40 minutes and preheat the oven to 170 degrees Celsius.

Bake the bread for 45-50 minutes.

After the first 30 minutes, cover the bread with foil.

Remove it from the oven and let it cool slightly.

Serve it warm at the table ❤️

Note: It took me a little longer to bake the bread. 15 minutes longer.
