You will need:
- 12 slices of bread, preferably white sandwich bread without crusts (I use homemade)
- 500g mozzarella
- Salt
- 5 eggs
- 100g flour
- 300g breadcrumbs
- To start, let the mozzarella drain well.
- Beat the eggs lightly with salt.
- Prepare a plate with flour and another with breadcrumbs.
- Now, place the mozzarella on a slice of bread… you can add anchovies or prosciutto cotto (cooked ham) as desired.
- Then, cover with another slice of bread.
- Repeat with all the bread slices.
- Dredge each sandwich in the flour (making sure they are fully coated on all sides).
- Then, coat each sandwich in the egg mixture (covering each side completely and letting excess drip off).
- Finally, coat each sandwich in the breadcrumbs (making sure they are fully coated on all sides).
- Arrange all the sandwiches on a baking sheet lined with parchment paper.
- Chill in the refrigerator for 30 minutes.
- Remove from the refrigerator and once again dip each sandwich in the egg mixture and coat with breadcrumbs.
- Chill for another 30 minutes.
- Heat the oil to 170-180 degrees Celsius (I use peanut oil).
- Fry the sandwiches on both sides until golden brown.
- Place the finished sandwiches on paper towels to drain.
- Serve hot.
