You will need:
For the pastry:
- 300g Flour
- 110g Sugar
- 110g Butter
- 1 tbsp Baking powder
- 1 Egg
- Zest of 1/2 Lemon
For the filling:
- 300g Pastry cream
- 2 Apples
- 40g Sugar
- Lemon juice
- Lemon zest
- 150g Mascarpone
For the pastry cream:
- 3 Egg yolks
- 350g Milk
- 80g Sugar
- 40g Flour
- Lemon zest
(Note: The measurements are provided in grams.)
To start, clean and chop the apples. Place them in a frying pan, add sugar and lemon juice, and cook for 15 minutes.
Set aside the cooked apples to cool.
Prepare the custard (you can find the ingredients for 300g of custard in the ingredient list and the preparation process here).
Let the custard cool.
Prepare the pastry.
Mix flour, baking powder, lemon zest, sugar, and room-temperature (soft) butter until it reaches a sandy consistency.
Then add the egg and mix until it reaches a sandy consistency again.
Now, mix the cooled custard, mascarpone, apples, and lemon zest.
Now, in a 20cm baking dish, place a portion of the pastry, forming high edges.
Then, spread the custard mixture and cover with the remaining pastry. You can also decorate with pine nuts.
Bake the pie for 40 minutes at 180 degrees Celsius (356 degrees Fahrenheit).
Let the pie cool well before serving.
