Today I’m sharing another cheese recipe with you. Of course, I understand that nowadays you can easily buy it at the store. But there are situations when you simply can’t find it, and as you’ll see from the recipe, it’s easier to make it than to run around the stores in search of good mascarpone. I’ve added the video below in Russian. I know it might be difficult to understand the language, but if you read the recipe and watch the video, it can help you understand the steps.
You will need:
- 500 ml of cream
- 7 ml of lemon juice
Pour the cream into a saucepan and heat it over medium heat until it reaches 80°/85°C, constantly stirring with a whisk. Once your cream reaches the desired temperature, add the lemon juice and continue stirring with the whisk. Keep the cream on the heat for another 5 minutes.
Then set aside the saucepan and let the cream sit for another 15 minutes. Take a small deep container, place a sieve on it, and cover the sieve with cheesecloth or a thin cloth. Now pour the cream into the sieve, cover it with the cloth from the top, and place it in the refrigerator for 12-24 hours.
Your mascarpone is ready! ?
