You will need:
- 250g High-grade flour
- 100g Sugar
- 100g Butter
- 1 Egg
- 8g Baking powder
- A pinch of salt
- 25g Filtered mandarin juice
- Grated zest of 1-2 mandarins
- Sugar for coating
- Powdered sugar
Blend the mandarin and strain it through a sieve.
Knead the flour and butter.
Now add sugar, zest, egg, baking powder, and knead.
Then add juice and salt and knead again.
Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Form 20 balls and flatten each one from the top.
Place the cookies on a baking sheet lined with parchment paper.
Cover with plastic wrap and refrigerate for 1 hour. This is necessary for the crust to crack and become crispy during baking.
After the time has elapsed, dip each cookie in sugar and then in powdered sugar.
Bake at 170 degrees Celsius with ventilation for 15-20 minutes.
