You will need:
- 2 Eggs
- 70g Coffee
- 110g Milk (I used almond milk)
- 190g Sugar
- 10g Baking powder
- 40g Vegetable oil
- 2 tbsp Instant coffee
- 240g Flour
To start, beat the eggs with sugar at high speed until the mixture becomes white and fluffy (about 5 minutes).
Gently heat the milk and prepare the coffee in advance.
Add the instant coffee and mix well.
Now, add the milk with coffee to the beaten eggs, continuing to mix at medium speed.
Then, add the oil.
Finally, add the sifted flour and baking powder, continuing to mix.
Do not overmix, just until a homogeneous consistency is achieved.
Transfer the batter to a baking pan of 22-24 cm in diameter.
Bake at 180 degrees Celsius for 45-55 minutes.
Check for doneness before removing from the oven.
Let the cake cool down and serve.
