You will need:
- 3 eggs
- 200g sugar
- 250g all-purpose flour
- 10g baking powder
- 80ml espresso coffee
- 100g butter or 80g of veg. oil
- 80ml milk
- 65g dark chocolate
- Powdered sugar, to decorate
- In a small bowl, melt the dark chocolate and butter pieces in the microwave for about a minute. Stir, and if necessary, microwave for another 30 or 60 seconds.
- In a separate bowl, beat the room temperature eggs with the sugar.
- Add the melted butter and chocolate to the egg mixture and mix.
- Now, add the coffee.
- Also, add the milk and mix everything well.
- Sift the flour and baking powder, then gradually add it to the mixture, stirring until you have a creamy, lump-free batter.
- Butter and flour a cake pan (a 22 cm diameter bundt pan was used in this recipe, but a 24 cm pan will also work). Pour the batter into the pan and bake the cake in a preheated oven at 180°C (350°F) for 30-35 minutes. Do the toothpick test after 30 minutes.
- Let the cake cool slightly, then remove it from the pan and let it cool completely on a wire rack. Finally, decorate it with powdered sugar.
