We are all familiar with the delicious recipe for tiramisu, but how is the most classic Italian dessert really made?
You will need:
- 500g Mascarpone (recipe here)
- 300g Savoiardi Cookies (recipe here)
- 150g Sugar
- 6 Egg Yolks (at room temperature)
- 4 tbsp Marsala (Sweet Italian wine)
- 4 cups Strong Coffee
- Cocoa Powder
- Prepare coffee in advance and set it aside to cool.
- Whisk egg yolks and sugar until the mixture becomes light and airy.
- Add Marsala (optional) and Mascarpone.
- Mix well with a silicone spatula until smooth.
- Take a deep dish with a minimum height of 5cm and dimensions approximately 20x25cm.
- Take savoiardi and dip each one in coffee, then arrange them tightly in the dish, covering the bottom. Do not soak the biscuits too much, or your tiramisu might turn into mush later.
- Then, layer the cream over the biscuits and add another layer of biscuits.
- Continue this process using all the ingredients.
- The final layer should be the cream.
- Now, refrigerate the tiramisu for 4 hours, or preferably overnight. Dust the tiramisu with cocoa powder before serving.
Egg Pasteurization:
Prepare the cream with egg yolks, sugar, and Marsala. Heat the cream in a double boiler until it reaches 85°C, stirring constantly. Then, cool the cream and only then add Mascarpone.
