CINNAMON in the house!!! The weather demands it ?
You will need:
Dough:
- 225g Slightly warm milk
- 3 Room temperature eggs
- 75g Soft unsalted butter
- 540g Flour
- 1 tsp Salt
- 100g Sugar
- 5g Dry yeast
Filling:
- 75g Soft unsalted butter
- 180g Brown sugar
- 15g Cinnamon
For the glaze:
- Juice of 1/2 orange
- 1 Egg white
- 125g Powdered sugar
Mix all the ingredients for the dough (approximately 10 minutes, the dough should pull away from the edges of the mixer).
Lightly grease a deep bowl with butter and place the dough inside.
Cover and put it in the oven with the light on for 2 hours.
Then mix sugar with cinnamon.
Sprinkle the work surface with flour.
Place the dough on it.
Spread it with your hands into a rectangle measuring 25×40.
Spread butter over the entire surface.
Cover with sugar and cinnamon.
Roll it into a log as shown in the photo.
Then divide the log into 12 parts.
Place them in a deep baking dish, or you can bake them as individual rolls on a baking sheet (in this case, keep an eye on the baking time).
Let it rise again in a warm place for 30-40 minutes.
Preheat the oven to 200 degrees Celsius and bake for 35 minutes. If it gets too dark during baking, cover it with foil and continue baking.
Prepare the glaze. Whisk all the ingredients together.
Once the baking is done, turn off the oven, take out the brioche, and cover it with the glaze.
Put it back in the oven and let it dry for 10-15 minutes.
Let it cool and hide it away.
