You will need:
Base:
- 260g Cookies
- 60g Amaretti cookies (can be replaced with plain cookies for cheesecake)
- 110g Butter
- 30g Sugar
Filling:
- 600g Philadelphia cream cheese
- 250g Ricotta cheese
- 4 eggs
- 100g Sugar
- 100g White chocolate
- 130g Cherries in syrup
For decoration:
- 200ml Sour cream or mascarpone
- 1 tablespoon powdered sugar
- 80g Cherries in syrup
- 30g White chocolate
Prepare the base.
Crush the cookies with sugar, add melted butter and a pinch of salt, then distribute the cookie mix in a baking mold with a diameter of 20 cm.
Put it in the refrigerator to set for 20 minutes.
Preheat the oven to 155°C.
Meanwhile, prepare the filling: melt white chocolate in a water bath and let it cool.
Mix ricotta, Philadelphia cream cheese, sugar, and eggs with a whisk until smooth.
Add melted chocolate and mix again until the mixture is smooth and without lumps.
Evenly distribute black cherries on the cookie base, then pour the creamy mixture and level it with a silicone spatula.
Bake in the oven for 50 minutes or until golden brown, then remove from the oven and let it cool completely.
Now, put the cake in the refrigerator for a couple of hours.
Before serving, mix sour cream with sugar and decorate the cake.
Garnish with cherries and chocolate.
