Ingredients:
- 400g Flour
- 130g Brown Sugar
- 2 Carrots (200-250g) – I used 300g
- 8g Baking Powder
- 30-60ml Water
- 40g Almond Shavings
- 100ml Vegetable Oil
- Finely grate fresh carrots.
- Start by mixing flour, baking powder, sugar, almond shavings, and grated carrots.
- Add vegetable oil and water gradually. The amount of water may vary depending on the dough. The dough should remain slightly moist but dense.
- Cover the dough with plastic wrap and refrigerate for 20 minutes.
- Preheat the oven to 190°C.
- Roll out the dough and cut cookie shapes.
- Place the cookies on a baking sheet lined with parchment paper.
- Decorate the cookies as I did.
- Bake the cookies for 15-20 minutes in a well-preheated oven
