Ingredients:
Dough:
- 500g Flour
- 350g Sugar
- 280g Unpeeled Almonds
- 80g Butter
- 5 Eggs (3 whole + 2 yolks)
- 8g Baking powder
- Grated Orange Zest
- Pinch of salt
For the working surface:
- 20g Flour (no more)
For the covering:
- 1 Egg
To begin, prepare the nuts. Preheat the oven to 180 degrees Celsius.
Spread the nuts on a baking sheet and place in the oven for 10 minutes, stirring occasionally.
Then let them cool.
Whisk the eggs and sugar until a snowy consistency is achieved (approximately 10 minutes).
Melt the butter over low heat and add orange zest. Let it cool.
Then add the butter and salt to the eggs. Then add the nuts.
Change the mixer attachment (see photo) and add the flour with the baking powder. The dough will be quite sticky.
Sprinkle the working surface with flour and place the dough on it.
Divide the dough into 3 equal parts. Now form an elongated sausage from each part. Place them on a baking sheet.
Brush lightly with beaten egg. Bake in a preheated oven at 180 degrees Celsius for 30 minutes.
Then let the cookies cool completely. If the cookies do not cool, they may crumble when sliced.
Slice the cooled cookies and place them on a baking sheet.
Now bake at 160 degrees Celsius on each side for 10 minutes.
