You will need:
- 2 eggs
- 300ml kefir
- 280g flour
- 60g butter
- 100g sugar
- 4 apples
- 16g baking powder
- Lemon zest
To start, cut the apples into small slices and lightly drizzle them with lemon juice. This will prevent the apples from darkening.
Next, beat the eggs with sugar and soft butter until you get a fluffy mixture, approximately 10 minutes.
Then, add the kefir and lemon zest. Gently mix with a silicone spatula.
Add the sifted flour and baking powder, and again, gently mix with a silicone spatula.
Add 3/4 of the sliced apples and mix.
Transfer the batter to a baking dish with a diameter of 24 cm.
Top the surface with the remaining apple slices.
Bake at 180 degrees Celsius for about 50 minutes or until the top is golden.
Check the cake for doneness before removing it.
I personally recommend letting the cake cool slightly in the oven. To do this, turn off the oven and crack the door open. Leave it like this for 5-10 minutes. This way, you’ll avoid a rapid temperature change, and the cake won’t collapse.
