Roasted vegetables:

You will need:

  • Assorted vegetables (I’m using zucchini, eggplant, potatoes, bell peppers, and tomatoes)
  • Breadcrumbs
  • Aromatic herbs
  • Garlic
  • Olive oil

  1. Mix the breadcrumbs with finely chopped herbs, minced garlic, salt, and olive oil.
  2. Slice all the vegetables (slice the potatoes very thinly).
  3. Drizzle olive oil on a baking sheet.
  4. Arrange the vegetables on the baking sheet and sprinkle with the breadcrumb mixture.
  5. Bake at 180 degrees Celsius for 20-25 minutes.
