Eggplants with mozzarella!


You will need:

  • 2 Eggplants (preferably long)
  • 1-2 Mozzarella cheeses
  • Basil
  • 300g Canned tomatoes (passata)
  • Olive oil
  • Parmesan cheese
  • Salt

  1. To start, slice the eggplants.
  2. Fry or grill all the eggplant slices – it’s your choice.
  3. Wrap a piece of mozzarella and a basil leaf in each eggplant slice.
  4. Spread a mixture of tomatoes, olive oil, and salt on the bottom of a baking dish.
  5. Arrange all the eggplant rolls in the dish and drizzle with the remaining sauce.
  6. Sprinkle with cheese.
  7. Bake the eggplants at 180 degrees Celsius.
  8. Then increase the temperature to 200 degrees Celsius, switch on the grill function, and cook for an additional 5 minutes.
